Summer salads: cucumber salad & avacado salad on crostini

A couple of light and delicious salads that I've made multiple times this summer: cucumber and dill salad and avocado "salad."

I've made the cucumber salad a couple of times - trying to replicate what my mom made when I was little. And the avocado salad was really just an excuse to eat a perfectly ripe avocado in a simple, but delicious, way. Both can be made to your particular taste - they are perfect for just winging it.

Cucumber Salad with Dill (all of my measurements are approximates)
2 English cucumbers, sliced very thinly (if you only have regular cucumbers, slice them lengthwise and scrape the seeds out with a spoon)
1/4 c. white wine vinegar
1 t. salt
1 t. sugar
2 T. fresh dill, finely chopped
squeeze of lemon juice
drizzle of olive oil (optional)

I used an awesome Benriner mandoline from Japan to slice my cucumbers. If you don't have a mandoline, just slice them very thinly with a sharp knife.

Put the cucumber slices into a large bowl and add remaining ingredients. Stir well.

Chill for several hours or overnight to let the cucumbers pickle a bit. (I don't bother to drain my cucumbers until right before serving. If you prefer to drain your cucumbers, slice and add the salt, let sit for 30 minutes, then drain; add the remaining ingredients.) Enjoy!

Another delicious "salad" I made several times this summer is this avocado salad. It's so easy.

Avocado Salad
1-2-3 ripe avocados (or however many you plan to serve)
squeeze of lemon (or lime) juice
drizzle of olive oil
sprinkle of flaky sea salt (I used my fancy sea salt I bought this spring in Iceland...perfect!)

Cut each avocado in half, lengthwise; remove pit.

With the avocado half still in the skin, slice into 1/4" slices (or however thick you prefer). Using a large spoon, slide it between the avocado flesh and skin to easily lift your slices out.

Gently fan the slices on a plate or platter and squeeze the lemon (or lime) juice over the slices. Drizzle a bit of olive oil over the avocado and finish with a sprinkle of sea salt.

Serve with a loaf of fresh bread or crostini. Just looking at these pictures is making me hungry!

Parker House rolls

I have been in the mood for some fresh, soft bread rolls lately, so I made these super buttery Parker House rolls earlier this week.

The rolls originated in the Parker House hotel right here in Boston (wicked awesome)! The original Parker House rolls recipe calls for using round cutters, but I adapted my recipe from Bon Appétit's and followed their method, where you roll out the dough and cut it into a rectangle shape. It was a bit tedious to roll, cut, butter, and fold 36 rolls, so I would probably use a different shape if I were to make these again.

Overall, the dough was very easy to work with and the rolls themselves were light, soft, and buttery. I definitely recommend trying these rolls (but skip the time-consuming rolling and folding). I would recommend instead to either skip the inside buttered layer or to perhaps roll out the whole dough, cut it into thirds lengthwise, butter that, fold it and then cut that up. I think that would go much faster. Here is my recipe, adapted from the Bon Appétit recipe.

Ingredients
2 1/4 t. active dry yeast
1/4 c. warm water (110-115 degrees), to proof the yeast
1 c. whole milk
1/4 c. unsalted butter, cut into pieces
3 t. sugar (add a pinch to the proofing yeast)
1 1/2 t. sea salt
1 egg, at room temperature
3 1/2 c. all-purpose flour, plus more for rolling out the dough
another approx. 1/4 c. unsalted butter, melted, for brushing the dough and baked rolls

Using the melted butter, butter two 9x9" pans, or you can use a 9x13" pan; set aside.

Proof the yeast in a small bowl by combining the yeast, warm water and a pinch of sugar (to feed the yeast). Set aside for 5 minutes.

Heat the milk, butter, sugar, and sea salt (whisking to blend) until warm and the butter is almost melted; pour into a large bowl. Add the yeast mixture and egg; whisk to blend.

Add the flour all in one go. Mix quickly with a large spoon until the dough starts to come together.

Turn the dough out onto a floured surface and knead for about 5-6 minutes. It will be very sticky at first, but keep kneading until it is smooth and elastic.

Oil a large bowl and transfer the dough to the bowl, turning the dough over so it is lightly coated with oil. Cover with plastic wrap then a large kitchen towel and set in a warm place to rise until it has doubled in size (about 90 minutes or so, depending on the temperature of your kitchen).

Gently deflate the dough by punching it down; turn it out onto a lightly floured surface and divide into four equal pieces.

Roll out each piece of the dough into a rectangle about 12x6" then cut into 12 equal sized pieces. You should end up with 12 pieces, each approximately 4x2"

Butter one half of each small rectangle of dough and then fold the unbuttered half over so the "tail" of the unbuttered dough hangs slightly over the buttered half; see the next two photos.

Layer the folded-over rolls in the baking pan so they are staggered and slightly overlapping, and with the unbuttered "tail" underneath the roll that is on top. It is hard to describe, so see the next two photos.

Repeat this process (rolling out, cutting, buttering, folding, layering) with the remaining 3 pieces of dough. This is the part I felt took too long. Next time I'll shape them differently so this is faster.

The rolls don't look like much at this point - so flat and lifeless - but after they rise again they will look much more like real rolls. Cover the pans of rolls with a kitchen towel and set them aside for the second rise (about 45 minutes). Toward the end of the second rise, preheat the oven to 350.

After the second rise, gently brush the rolls with melted butter. Bake at 350 for 20-25 minutes until they are golden brown.

Immediately after taking the rolls out of the oven, brush again with melted butter and sprinkle with large flake sea salt. Serve warm.

Cucumber & Red Onion Salad

My mom used to make a yummy cucumber salad when I was little. I tried to recreate it here...It was good, but not like mom's.

The ingredients are simple: cucumbers, red onion, olive oil, lemon juice, vinegar, salt, sugar. I think mine wasn't quite like mom's because I used balsamic vinegar instead of white wine or rice vinegar. I'll have to experiment with a different vinegar and see if it comes out better...or I guess I could just call mom.

Homemade Baked French Fries

I love making my own french fires. I cook them in the oven with olive oil, balsamic vinegar and sea salt. Simple and delicious.

I'm not too picky about the type of potato, I just slice them - skin on - into thin sticks and pour over some olive oil (a few tablespoons, but enough to fully coat them and leave a little on the pan bottom) and some balsamic vinegar (about 2 teaspoons or to taste). Toss the fries - I just use my hands - then spread out on a sheet pan into a single layer, or as close to that as you can. Depending on how many potatoes you used you may need to use a second sheet pan - they will come out much better if they are not crowded. Finally, sprinkle some sea salt over the potatoes before you put them in the oven.

Bake in a 450-475 degree preheated oven. Check them after about 15 minutes or so; use tongs to flip them if you need to. Keep cooking until they are golden brown or you just can't wait any longer.

The olive oil helps them to get really crispy and crunchy on the outside and the balsamic vinegar caramelizes a bit and gives the french fries a lovely flavor. Serve with ketchup. YUM!
